Keto Green Smoothie Surprise

Here’s a recipe for an awesome spinach smoothie with a sweet surprise - strawberries! The berries totally transform the flavor from “green” to “GREAT”! And with only 3 net carbs per serving, everyone loves this recipe, especially those on a low-carb or keto diet. Here’s how simple it is to make.

Start with really good strawberries. If you can’t find sweet, ripe strawberries, pick up a bag frozen berries from the grocery store. They’re picked and frozen at their peek - just let them thaw a bit before using.

Place the strawberries and fresh spinach in a personal blender (or large blender if you’re making a large quantity).

Add unsweetened almond milk and heavy cream.

Keto Green Smoothie Surprise

makes 1 serving (can easily be scaled up)

Ingredients

  • 2 ounces fresh strawberries, hulled

  • 2 ounces fresh spinach

  • 2 ounces unsweetened almond milk

  • 2 ounces heavy cream

  • optional: 1 packet sweetener of choice, if needed

Directions

  1. Place all ingredients into a drink mixer or blender and blitz until smooth.

Nutritional stats: 229 calories, 1g protein, 21g fat, 5 carbs, 2g fiber (NET CARBS 3g).

Note

  • Recipe can easily be scaled up to make as many servings as you like - just mix the ingredients in a blender.

Berry Breakfast Smoothies

Our youngest is home from college this summer and we've been treating ourselves with smoothies each morning.  Too much work that early in the day?  No worries, just put everything in your blender jar and stash it in the fridge… the only thing you’ll have to do in the morning is walk your groggy self to the blender base and hit the power switch.

This recipe was inspired by Alton Brown.  It's not only delicious, but it contains high vitamins, antioxidants, and fiber so it's nutritious too!

Start with strawberries, blueberries, peaches, and bananas (amounts given in the recipe below).  You can use fresh or frozen fruit.

If you use frozen fruit, place it in the blender jar and store overnight in fridge (to partially thaw) or on the counter (to fully thaw) before processing.  Makes for quicker morning prep too.

Add pomegranate juice and milk (or milk substitute).

Blend until smooth.

Gotta love how fast and easy smoothies are to make.

And here's my little tip for cleaning that dirty blender jar.  Fill it with some water and ONE DROP of liquid dish soap.

Cover and blend, blend, blend.

All the junk is dislodged from the jar and lid - just a quick rinse and it's ready for breakfast tomorrow.
