Keto Waffles

makes 2 servings

Ingredients

  • 1 large egg

  • 2 tablespoons salted butter, melted

  • 2 1/2 tablespoons unsweetened almond milk

  • 1/2 teaspoon pure vanilla extract

  • 1/2 cup finely ground almond flour (or meal), sifted

  • 1 tablespoon confectioner’s erythritol (like swerve)

  • 1/4 teaspoon baking powder

Directions

  1. Preheat waffle maker (a thin waffle maker works better than Belgian-style for this recipe).

  2. Place all the ingredients in a high-speed beverage blender and process for a full minute.

  3. If needed, brush the waffle maker with a little oil or clarified butter; pour half the batter into the preheated waffle maker and cook until golden brown; repeat.
